In food establishments, smoking and eating are permitted in designated areas away from food preparation for several important reasons. Firstly, these designated areas are typically set apart to minimize the risk of contamination. Food preparation areas must maintain strict hygiene standards to ensure the safety and quality of the food being served, and allowing eating or smoking in those spaces can introduce harmful substances.

Additionally, having a separate area helps maintain a pleasant dining environment. It keeps the smell of smoke away from food, which can affect taste and overall dining experience. This separation also ensures that all patrons have a clean and safe area to enjoy their meals without the disruption or hazards that might arise from smoking near food prep areas.

Also, designated areas often have proper ventilation and waste management systems that help manage smoke and discarded materials more effectively than a kitchen environment would. This helps keep the kitchen focused on food safety and hygiene, which is of utmost importance in food service operations.
